Mushroom Stroganoff

2 large onions
3 cloves of garlic crushed/chopped
1lb mushrooms sliced (can use button mushrooms alone or add some more exotic varieties as well for extra taste if the budget allows)
1 tablespoon of tomato puree
salt and pepper to season
1 teaspoon of paprika
½ tsp ground nutmeg
approx 6 tablespoons of fat free natural yoghurt or fat free Fromage Frais or Quark

Basically fry all ingredients in frylight, starting with onions and garlic and adding mushrooms after about 5 minutes. Add tomato puree, paprika, nutmeg and seasoning. Turn heat down really low and then add yoghurt/FF/quark and heat gently for a minute. Quark is the least likely to curdle but a bit tangy – mix of quark and yoghurt best IMO!

Serves 4 – add rice/tagliatelle/mash
syn free on Extra easy or I count ½ syn and serve 2!!!
